Introduction

Potatoes, peas, and some types of meat are the key Ingredient List: that are put together to bring you spicy and delicious pieces of samosas. Triangular shaped and deeply fried bring out the flakiness and crunchiness that we all crave. You can never get tired of munching on samosas!! Samosas come in different versions, and it is a pity that most of these different versions are not always available in restaurants or snack shops. 1) Carrot Samosa

Carrot samosa is a very good substitute for another samosa . It is sweet, nutritious and full of aroma . Ingredient List: Filling Ingredient List: 1 cup Carrots ( diced ) 1 cup Green peas 2 tbsp. Green and fresh chili ½ tbsp. Amchur powder ½ tbsp. Turmeric powder ½ tbsp. Masala ½ tbsp. Mint ½ tbsp. Salt 1 Bread Samosa pastry Ingredient List: 4 cups All-purpose flour ½ tbsp. Salt 1 cup Water / milk 2 Eggs 1 tbsp. Oil OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Boil peas and carrots . Leave them to boil . 2 . Take flour, milk, eggs, oil and salt and mix them in a bowl . Knead well to make a soft and smooth dough . 3 . Cover the dough and set it aside for 15 to 20 minutes . 4 . On a pan, heat some oils . Put all the filling Ingredient List: and stir them well . Allow them to cook for 3 to 5 minutes . 5 . Take the boiled carrots and mash them . Put them in the mixture and stir .

6 . Put the boiled peas in the mixture and stir . Cook for 2 minutes . 7 . Switch off the fire and set it aside to cool down . 8 . Take the dough and cut it to pieces . Roll the pieces to circular shapes . Cut the shapes into halves . 9 . Using your finger, roll the pieces to make cone shapes . Use a spoon to fill the cones with the fillings . 10 . Make sure you seal the edges of the samosa with water . 11 . Deep fry the samosas until they are crispy and lightly brown . 12 . Remove them and drain - dry them with a kitchen towel . 13 . Serve them hot .

2) Potato and Chickpea Samosas

Have your potatoes and chickpea ready and you will surely enjoy this recipe . It is delicious and easy to cook . Ingredient List: 3 cups Mashed potatoes 1 cup Chickpeas 3 cloves Garlic ( peeled and smashed ) 1 tbsp. Oil 1 cup Raisins 2 cups Water 3 Green chilies 1 tbsp. red pepper 1 tbsp. Curry powder 1 tbsp. Fenugreek seeds 1 tbsp. Cumin seeds 1 tbsp. Fennel seeds chunk Ginger ( peeled and smashed ) ½ tbsp. Salt 1 tbsp. Olive oil ½ cup Cilantro ½ cup Tamarind syrup ½ tbsp. Soya sauce Prior prepared dough OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Heat oil in a pan . Put ginger and garlic and heat for a minute . Make sure they produce a sweet aroma . 2 . Put fennel seed, cumin and fenugreek seeds . Fry them for 3 - 5 minutes .

3 . Take the pepper and wash them well . Cut them into thin pieces . Add it to the pan . 4 . Add chili . Stir and make sure they do not stick in the pan . 5 . To the mixture, add the mashed potatoes . Stir to make sure all the Ingredient List: are well mixed . 6 . Remove the Ingredient List: from the fire and add curry powder . Mix well to spread evenly . 7 . Leave it to cool down . 8 . Take the prior prepared dough and cut into equal pieces . 9 . Roll the piece using a rolling pin to circular shapes . 10 . Cut them into four equal parts. 11 . Fold the pieces from the bottom right corner . This will give you a triangular shaped samosa . Seal the edges with water . 12 . Fill the samosa with the fillings using a tbsp. . 13 . Seal the edge and put them aside . 14 . Heat oil in a frying pan . Dip the samosa to deep fry until they are crispy and golden brown . 15 . Drain and dry them . 16 . Serve when hot or cold .

3) Meat Samosa

This is a samosa made of meat of any type; mutton, pork, beef or chicken . If you prefer meat to vegetables, this is the right samosa for you . Makes: 5 Ingredient List: Oil 1kg minced meat ½ tbsp. salt 2 large white or red onion, finely chopped 1 tbsp. chilli 2 crushed gloves garlic ½ teacup of water ½ tbsp. cinnamon powder ½ tbsp. ground cumin 2 freshly chopped coriander 1 packet pastry sheets 2 eggs 3 cups Wheat flour OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Heat the pan, add oil to it . Add onions and ground cumin . Stir until they brown lightly. 2 . Add the minced meat, chili, garlic, coriander and stir to mix thoroughly . Add salt to the mixture . Keep stirring and adding water to avoid sticking on the pan . 3 . Cook for 5 to ten minutes. 4 . Cool down the mixture. 5 . Spread the pastry sheet and cut then into four equal parts . 6 . Put the cooled down mixture on the cut pastry sheets and fold in a triangular shape . 7 . Mix the eggs, flour and water in a bowl .

8 . Seal the edges of the folded pastry sheets using the egg - flour paste . 9 . Deep fry it for 10 to 15 minutes until they brown lightly . 10 . Serve when ready. Tips : Rub the cumin seeds with your hand to produce its sweet aroma. Serve with the salad of your choice.

4) The Hirshon Burmese Samosas

This is a samosa whose main ingredient in its filling is corn starch . It has its special sauce which you serve samosa with . Have a try and enjoy the sweet recipe . Ingredient List: 2 cups Warm water 2 eggs 4 cups All-purpose flour 1 tbsp. Salt ½ tbsp. Ajwain seeds Vegetable oil 1 cup Peeled diced potatoes ½ cup Chopped red or white onions 3 Spring curry leaves ¼ cup Minced jalapeno 2 tbsp. Minced fresh mint 4 tbsp. Chili powder 2 tbsp. Turmeric powder 3 tbsp. Chicken powder 4 tbsp. Sugar 3 tbsp. Garam masala 1 tbsp. Ground Ajwain seeds 2 cups Cornstarch Sauce : 2 tbsp. Tamarind paste 3 Chopped garlic 1 Grated ginger

1 tbsp. Honey 1 tbsp. Mushroom sauce 1 tbsp. Fish sauce 1 Thai bird ’ s eye chili OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . In a bowl, mix the warm water, flour, salt, eggs, ajwain, oil and salt . Mix well to ensure oil spread evenly . Knead thoroughly to make soft and smooth dough . Cover the dough for about 20 minutes . 2 . Chop the potatoes into dices and boil them in water until they soften . 3 . Heat the frying pan, add oil and onions . Stir the onions until they brown lightly . 4 . Add all the contents . Heat until they dry up . Make sure you remove the curry leaves and discard them . 5 . Set aside for the mixture to cool down . 6 . Divide the dough into 10 pieces . Cut the pieces into two such that you will have 20 pieces . 7 . Using your finger, spread cornstarch to each half . Place the cooled down mixture in each of the halves . Fold the halves in a triangular shape . Seal the edges well . 8 . Deep fry in hot vegetable oils until they are crispy . 9 . Drain and dry the samosa . 10 . Put the Ingredient List: of the sauce in a blender . Blend them all to mix thoroughly to form a thick sauce . This sauce will be used to serve together with the samosa . 11 . Serve at your own pleasure .

5) Samosa Pav

Eaten by kids and adult, the snack is delicious and very attracting . It is a fast food and can be eaten any time of the day . Ingredient List: For the fillings; 1 tbsp. Oil 1 tbsp. Salt 1 tbsp. Masala powder 2 cups Potatoes ( peeled and diced ) 1 tbsp. Chili ( green and fresh ) 1 tbsp. Ginger ( paste ) 1 tbsp. Garlic ( paste ) 1 cup Ghee 2 tbsp. Coriander leaves ( fresh and green ) 6 Pavs 4 bars Butter ¼ tbsp. Red chili For the dough; ½ tbsp. Salt 2 Eggs ½ tbsp. Sugar 1 tbsp. Oil 1 cup Warm water 4 cups All-purpose flour OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: Dough making; 1 . In a large bowl, mix flour, salt, eggs and sugar . Add water bits by bits and knead the dough well . Make sure it is smooth, elastic and soft . 2 . Cover the dough and set it aside for 15 to 20 minutes . Filling making; 1 . Put on the flame and heat ghee in a pan . 2 . Add ginger, garlic and green chili . Stir until they produce a sweet fragrance . 3 . Add the other Ingredient List: and thoroughly mix . Cook for five minutes . Make sure that the potatoes are well cooked . 4 . Divide the mixture into 2 and set it aside for the mixture to cool down . Samosa making: 1 . Cut the dough into 10 equal parts / balls . Roll the balls using a rolling pin until they are circular . Cut the circles into halves . 2 . Take the edges of the cut halves and fold them . Make sure they make a cone shape . 3 . Fill the shapes with the filling . 4 . Seal the open edge . Smear some water for it to stick together . 5 . Heat oil in a frying pan and deep fry the samosa . Ensure they are crispy and lightly brown . 6 . Drain the samosa and dry them . 7 . Serve when hot, warm or cold. 8 . Sandwich the samosa between the remaining fillings . Enjoy your snack .

6) Dry Samosa

This is a spicy and delicious samosa made of cashew nuts, dry mango and almonds . It is mouth watery and can be eaten whenever you are hungry . Ingredient List: 3 tbsp. Coconut ( grated ) 2 tbsp. Coriander seeds 4 tbsp. Cashew nuts ( well chopped ) 2 tbsp. Fennel seeds 4 tbsp. Almonds ( well chopped ) ½ tbsp. Turmeric powder 1 tbsp. Red chili powder ½ tbsp. Masala powder ½ tbsp. Dry mango powder 3 tbsp. Sugar Oil 3 cups All-purpose flour 1 tbsp. Salt 2 Eggs Directions 1 . Heat oil in a frying pan . Add the stuffing Ingredient List . Stir them until they dry . This will take 5 minutes . 2 . Add sugar and salt . Mix the stuffing until it roasts . 3 . Transfer the mixture to a bowl and let it cool for 5 minutes . 4 . In a bowl, mix eggs, salt, flour and oil . Knead into smooth and soft dough . Keep adding water as required . 5 . Cut the dough into 10 balls . Roll the balls using a rolling pin . Cut it into four parts . 6 . Roll the pieces into cone shapes . 7 . Fill the shapes with the stuffing mixture . Wet the edges with water and seal them well . 8 . In a deep frying pan, heat oil and deep fry the samosa until they brown lightly . Make them crispy . 9 . Drain them and dry them using a kitchen towel .

7) Onion Samosas

This is an onion filled samosa . It is sweet and yummy when onions are fried well . Try this recipe out and you will be surprised how you will love it . Ingredient List: For samosa pastry 4 cups Flour 1 tbsp. Salt 2 Eggs 1 tbsp. Carom seeds 1 tbsp. Oil For fillings 1 cup Onions ( thinly cut ) 3 Green chilies - well chopped ½ a cup Cabbages ½ tbsp. chili powder . 4 coriander leaves - chopped finely 1 cup flattened rice Salt Oil 1 cup of water OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Lit the fire and warm water . 2 . In a bowl, mix salt, oils, eggs, carom seeds and flour . Make sure that the Ingredient List: mix well . 3 . Add water little by little . Knead the dough until it is soft and smooth . 4 . Cover it with a kitchen towel and put it aside for 20 minutes . 5 . To make samosa fillings; mix the veges ( onions, cabbage, chili, salt and flattened rice - to absorb moisture from the onions ). Mix well and set them aside .

6 . Take the dough and cut it into equal sizes . 7 . Roll the balls into thin circles . Cut them into 2 equal halves . 8 . Fold the halves into cone shapes . Use water to stick the sides of the cones . 9 . In each cone, put 2 tbsp. of the onion fillings . 10 . Wet the open side of the cone with water and seal it . Repeat the process to all the pieces . 11 . Heat oil in a frying pan . Put samosa,3 or 4 at a time . Deep fry them under medium heat until they are crispy and lightly brown . 12 . Serve cold or hot, depending on your taste . Accompany it with tomato sauce or any other sauce of your choice . Hot coffee can do .

8) Mini Chinese Samosa

The best thing with mini Chinese samosa is you can be flexible enough on what to include if the filling . Let ’ s have a look at this recipe . Ingredient List: 2 cups All-purpose flour 2 eggs 2 tbsp. Semolina 4 tbsp. Butter ½ tbsp. Carom seeds 1 tbsp. Salt 2 cups Noodles Water 2 Tomatoes ( chopped thinly ) 1 cup French beans ( chopped ) 1 tbsp. Ginger ( grounded ) 1 tbsp. Soya ¼ tbsp. Chili sauce ½ tbsp. Pepper Oil OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . To make the dough for covering, take a bowl and put salt, eggs and flour . Add warm water in small portions and knead the dough well until it is soft . Cover it using a cloth and set it aside for 15 to 20 minutes . 2 . Boil noodles in water until they are soft . Drain them and set them aside . 3 . Heat oil in a pan under medium heat . 4 . Add ginger and green chili, stir fly for 1 minute . 5 . Add tomatoes, French beans, soya, pepper, chili and salt . Stir and fly for 5 minutes . 6 . Add noodles and stir thoroughly . Cover for 1 minute . Set it aside for cooling . 7 . Cut the dough into 10 equal pieces . Roll the pieces and cut them into 2 equal halves .

8 . Use your index finger to fold the half pieces into a cone . Add 1 or 2 tbsp. of the mixture and seal it . 9 . Repeat this for all the 20 pieces . 10 . Heat oil in a pan . 11 . Dip the samosas and deep fry until they are crispy and brown in color . 12 . Remove them and drain them in a kitchen towel . 13 . Serve at your own pleasure .

9) Tandoori Paneer Samosas

This is a tandoori paste and paneer and cheese filled samosa . It is delicious and easy to cook . Its origin is Indian but its deliciousness has enabled it to be adopted by many . Have a look too and try it out . Makes: 10 Samosas Ingredient List: For Tandoori paste 1 tbsp. Coriander seeds 10 Pepper corns 4 Kashmiri chilies 4 Cinnamon 2 tbsp. Cumin seeds 1Star anise 4 Cloves 1 Green cardamom 1 tbsp. Fennel seeds 2 Tomatoes ½ cup Lemon juice 2 tbsp. Brown sugar Salt 2 tbsp. Ginger ( grounded ) 2 tbsp. Garlic ( grounded ) For samosa pastry 4 cups All-purpose flour 2 cups Water

½ tbsp. Salt 2 Eggs Oil For filings 4 Onions 4 bars Cheese Paneer 1 cup Coriander ( green, fresh, chopped ) 1 tbsp. Oil ½ cup Water OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Put water on fire and warm it . 2 . In a bowl, put eggs, flour, oil and salt . Add warm water . Mix the mixture and thoroughly knead the dough until it is hard and smooth . Put it aside and cover it up . Leave it for about 20 minutes . 3 . Filling making : heat oil in a pan . Add onions and stir until they are golden brown . Add tandoori paste and stir for about 5 minutes . Keep adding some water to avoid sticking . 4 . Heat until it dries up . 5 . In tandoori paste, add cheese and paneer . Cook for five minutes . Stir to make sure that cheese spread to the mixture . Add coriander and stir . 6 . Cover the mixture and set it aside to cool down . 7 . Making pastry : take the already kneaded dough and cut it into five equal pieces . 8 . On a flat surface, roll the pieces into circles using a rolling spin . 9 . Cut the circles into halves . 10 . Fold the halves in such a way that they will form a triangular shape . 11 . Put the fillings in the triangular shapes . Fold the edges well . 12 . Heat oil in a frying pan . Deep fry the samosa until they have golden brown color . Allow them to be crispy . 13 . Remove the samosa and place them on a kitchen towel . 14 . Serve the samosa with any salad of your choice .

10) Bengali Mutton Samosa

This is an Indian recipe . The samosa is served with hot tea and is considered as a mid - day snack . Let ’ s have a look . It is a very beautiful recipe . Ingredient List: Filling Ingredient List: 500 grams Minced mutton 3 Potatoes ( diced ) 1 tbsp. Ginger ( grated ) 5 cloves Garlic ( grated ) 5 Green chilies ( well chopped ) 1 ½ cups Green peas ( boiled ) ½ tbsp. Cumin powder 1 tbsp. Chili powder ( red ) 1 tbsp. Turmeric powder 1 tbsp. Sugar ½ tbsp. Salt For the samosa pastry; 4 cups Flour 1 tbsp. Cumin seeds ¼ tbsp. Salt ¼ tbsp. Sugar 1 cup Warm water 1 tbsp. Oil 2 Eggs OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: For the dough; 1 . Put the pastry Ingredient List: in a mixing bowl and mix them . Keep adding water and knead the dough until it is soft, smooth and elastic . 2 . Cover it and set it aside for 20 minutes For the filling; 1 . Heat oil in the pan . Put garlic and the green chili . Stir for 3 minutes . 2 . Add minced mutton . Stir to mix . Cook for 4 minutes . Add potatoes and mix . Cook for 4 minutes . 3 . Add salt and other spices ( turmeric, chili powder, cumin powder ). Mix well that they may spread evenly . 4 . Add peas . Stir to mix well . Cook for 5 minutes . Make sure meat and potatoes are well cooked . 5 . Remove the fire and set it aside to cool down . For the pastry;

1 . Cut the dough into 10 equal parts / balls . Roll the balls using a rolling pin until they are circular . Cut the circles into halves . 2 . Take the edges of the cut halves and fold them . Make sure they make a cone shape . 3 . Fill the shapes with the filling . 4 . Seal the open edge . Smear some water for it to stick together . 5 . Heat oil in a frying pan and deep fry the samosa . Ensure they are crispy and lightly brown . 6 . Drain the samosa and dry them. 7 . Serve when hot, warm or cold .

11) Indian Samosa

These are Indian samosa . They are spiced up with different Indian spices and filled with vegetables mixed with potatoes and onions . Makes: 8 people Ingredient List: 2 cups of All-purpose flour 4 tbsp. vegetable oils 4 large boiled potatoes, boiled 2 white or red onions, thinly chopped 4 green chilies, well chopped 4 tbsp. oil 1 tbsp. ginger, well crushed 1 tbsp. garlic, thoroughly crushed 4 leaves Coriander ( chopped ) 1 tbsp. lemon juice 1 tbsp. turmeric ½ tbsp. masala ½ tbsp. chili powder 1 tbsp. Salt OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Put flour, water and salt in a bowl . Mix until the mixture becomes crumbling . 2 . Add flour and water until it becomes sticky dough . 3 . Set it aside and cover it for about 15 to 20 minutes . 4 . Heat oil in a pan . 5 . Add onions, ginger, garlic, coriander and chili . Stir until they brown evenly and lightly . 6 . Add lemon juice, turmeric, masala and chili powder . 7 . Stir fly for 3 minutes. 8 . Set aside and cool down the mixture . 9 . Uncover the dough and divide it into 10 pieces .

10 . Roll the pieces on a smooth surface using a rolling pin . 11 . Cut into 4 quarters . 12 . Using your finger, roll each quarter into a cone 13 . Fill the cones formed with the cooling down moisture . 14 . Seal the cone and deep fry them on medium heat . 15 . Allow them to brown lightly . 16. Serve with tomato sauce .

12) Pizza Samosa

Ever been bored that you don ’ t know what to cook or eat? This is a good snack for you . Have a look . Ingredient List: For the pastry; 10 pieces Samosa pastry sheets For the filling; 1 cup Onions ( well chopped ) ½ cup Pepper ( green, well chopped ) ½ tbsp. Salt A pinch of Black pepper 4 tbsp. Corn ( sweet ) 3 cups Mozzarella ( shredded ) 3 tbsp. Pizza sauce 3 tbsp. Flour 1 cup of Water 1 tbsp.ful Oils OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . To make samosa pastry, warm water . In a bowl, thoroughly knead flour, salt, eggs and warm water to make dough . Melt butter and spread in on the dough . Knead it until it is soft and smooth . Cover it and set it aside for 15 minutes . 2 . Boil corns for 15 - 20 minutes . Avoid overcooking . 3 . Chop coriander into fine pieces . Cut chili into small pieces too . 4 . Put butter in the pan and heat to melt it . Add some flour and stir . Cook it for 2 minutes . Add milk and stir . 5 . To the mixture, add the boiled corns and stir thoroughly to make cream corn .

Directions: 1 . In a deep pan, put the minced meet, heat on low heat; stir to avoid forming a lump . Allow it to dry completely . Do not let it stick on the pan . 2 . Add chilies, ginger, coriander, garlic, lemon juice and salt . Heat for 2 - 3 minutes on low heat . 3 . Gradually add chopped onions whilst you stir . 4 . Add turmeric to change onions ’ color . Stir the mixture for 5 minutes . Avoid overcooking . 5 . Turn off the heat . Add butter, lemon juice and remaining coriander .

6 . Stir the mixture to melt the butter . Add salt and chili powder to adjust their levels . Cool it down 7 . Mix four, eggs and water in a bowl . Knead until dough is formed . 8 . Leave it for about 10 minutes . Cut it into 8 equal balls . 9 . On a flat surface, roll the balls using a rolling pin . Cut them into 4 parts . Ginger ( grounded ) 1 tbsp. Green chili ( grounded ) 1 tbsp. Masala 1 tbsp. Cinnamon powder 1 tbsp. Fennel seeds 1 tbsp. Coriander powder 1 tbsp. Salt 1 tbsp. Lemon juice OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Dough making : warm water . In a bowl, mix eggs, flour, oil and salt to taste . Knead thoroughly until the dough is hard and smooth . Smear ghee round the dough with your hands . 2 . Cover the dough and set it aside for 20 minutes . 3 . Stuffing : boil the lentils until they are half cooked . 4 . Take a large bowl; put the smashed potatoes, ginger, green chili, masala, cinnamon, fennel seeds, coriander and salt . Mix them thoroughly . 5 . Add lentils . Mix well and carefully . Cover the mixture .

6 . Take the dough, divide it into 10 pieces . Roll the pieces to circular shape . 7 . Using a knife, cut the circular pieces into two . 8 . Using your finger, fold them into cone shapes . 9 . Put the stuffing into the cone shapes using a table spoon . 10 . Using your finger, apply some water on the open edge of the cone shape . Close the edge . 11 . Repeat the same to all other halves . 12 . Heat oil in a frying pan . Deep fry the samosas until they are crispy and brown . Serve at your own pleasure and sauce of your own taste . Make sure they make a cone shape . 3 . Fill the shapes with the cashew filling . 4 . Seal the open edge . Smear some water for it to stick together . 5 . Ingredient List: For samosa pastry; ½ tbsp. Salt 2 Eggs ½ tbsp. Sugar 1 tbsp. Oil 2 cups Warm water 4 cups All-purpose flour For the fillings; 2 tbsp. Mustard seeds 8 Curry leaves 10 grams Ginger paste 5 grams Garlic paste 3 Onions ( sliced ) 5 grams Coriander ( fresh, green, chopped ) 2 Chilies ( green and fresh ) ½ tbsp. Salt OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: For the pastry; 1 . In a bowl, mix flour, salt, eggs and sugar . Add water bits by bits and knead the dough well . Make sure it is smooth, elastic and soft . 2 . Cover the dough and set it aside for 15 to 20 minutes . For the fillings; 1 . Lit the fire, heat oils in the pan . Add onions; cook until they are lightly brown . 2 . Add mustard seeds to onions and cook until they crack . 3 . Introduce curry leaves, green chili, ginger and garlic paste . Stir the mixture until they mix well and evenly .

Cook for 3 minutes . 4 . Make sure the seasoning is as required . 5 . Next, add turmeric, coriander and salt . Stir well . 6 . Cook for 5 minutes . Set aside to cool down . For the samosa; 1 . Cut the dough into 8 equal parts / balls . Roll the balls using a rolling pin until they are circular . Cut the circles into halves . 2 . Take the edges of the cut halves and fold them . Make sure they make a cone shape . 3 . Fill the shapes with the filling . 4 . Seal the open edge . Smear some water for it to stick together . 5 . Heat oil in a frying pan and deep fry the samosa . 29) Beetroot and Feta Samosa (Baked and Spiced)

Let the mixture cook for 5 minutes . 2 . Set the mixture aside to cool down . 3 . Take the dough, cut it to 6 equal pieces . 4 . Roll the pieces till they are flat . Cut them into 4 pieces . 5 . Fold the pieces in such a way that they will form a triangular shape . 6 . Use a table spoon to put the fillings into the pastry . 7 . Cover the open end and seal the edges by smearing some water . 8 . Heat oil in a frying pan . Drop the samosa to deep fry until they get crispy and are golden brown . 9 . Remove them and dry them . 10 . Serve at your own pleasure . Use sauce of your choice to accompany the samosa .

This is an easy to cook recipe comprising of fish and cheese . It can be dished any time of the day . Directions: 1 . Warm water to make dough . 2 . In a bowl, put eggs, flour, salt and ghee . Add some water and knead the dough slowly until it is soft .

3 . Rub the ghee on the dough and cover it . Set it aside for 15 minutes . 4 . Boil the potatoes and peas separately . 5 . Chop the potatoes into dices and dry them . 6 . Put a pan on the fire, heat oil . 7 . Add cumin seeds to the pan, stir well for a minute . Add cinnamon, chili, ginger, peppercorns, cardamom and coriander seeds . 8 . Stir the mixture . Add salt and stir . Take care not to mix on the pan . 9 . Add potatoes and peas . Stir to mix the Ingredient List . Add some water to avoid sticking on the pan . Cover it for 5 minutes . 33) South African Samosa

Directions: 1 . Add oil to a deep pan, heat it . Add carrots, potatoes, peas, onions and vegetables at once . Stir and cover for about 15 minutes . 2 . Add salt, tagine and pepper . Stir and cover to simmer for about 3 minutes . 3 . Put off the heat and cool the mixture down. 4 . In a bowl, mix eggs, flour water and salt . Knead thoroughly to make a fine and soft dough . Cover it for 10 minutes . 5 . Divide the dough into equal 10 pieces . 6 . Roll the pieces into a circle and cut them into two pieces . 7 . Using your finger, roles the pieces into a cone . 8 . Fill the cones with the cooled down mixture and cover it up .

9 . Deep fry the samosa until crispy and lightly brown . 10 . Dry them with a clean kitchen towel . 11 . Serve.

34) Ndengu Samosas

These are Kenyan samosa filled with green grams . They are sweet snacks used to substitute meat or vegetables . They are spiced with different spices to make it sweeter and have a delicious taste . Makes: 20 Ingredient List: 4 tbsp. oil 2 tbsp. cumin seeds 4 cloves garlic, thinly chopped 2 tbsp. ginger, thinly chopped 2 tbsp. green chilies, well chopped 1 tbsp. turmeric powder 2 tbsp. curry powder 2 cups green grams, cooked 1 tbsp. Salt 2 red or white onions 4 Coriander leaves 40 Pastry sheets 2 Eggs and flour paste Oil OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Heat oil in the pan, add onions and cumin seeds . Heat while stirring until they are lightly brown. 2 . Add ginger, garlic and chili . 3 . Stir until they produce a sweet fragrance. 4 . To the mixture, add curry powder and turmeric powder, stir .

5 . Add the cooked green grams and salt . Allow it to cook for 3 - 5 minutes . 6 . Add coriander leaves and stir . Set it aside to cool down . 7 . Cut the pastry sheets into 4 equal pieces. 8 . Placed the cooled down mixture on each pastry sheet. 9 . Fold the sheet in a triangular shape . 10 . Glue the edges using the egg - flour paste. 11 . Deep fry for 5 - 10 minutes until they brown lightly . Stir regularly for the pastry to brown evenly. 12 . Serve with the salad of your choice .

35) Noodles Samosas

This is a much spiced Chinese samosa served with tomato sauce or any other sauce as desired . Ingredient List: 2 cups Noodles Oils 2 cups Warm water 1 tbsp. Carom seeds - crushed 1 tbsp. Salt 2 cups Ghee ½ tbsp. Ginger powder ½ cup Green chilies ½ cup Green peas ½ cup Carrots ( chopped ) ½ tbsp. Masala 1 cup Mushrooms ½ tbsp. Red chili powder ½ tbsp. Red pepper 1 tbsp. Soy sauce 1 tbsp. Lemon juice 4 leaves coriander, fresh and green OOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO

Directions: 1 . Boil the noodles in water until they are slightly soft . Drain them using a sieve and wash them with water . Set them aside . 2 . In a bowl, add warm water, flour, salt, ghee and carom seeds and mix thoroughly . Knead the dough by adding water in small portions until it is hard . Cover it and keep it aside for about 15 minutes .

3 . Place a pan on fire . Pour some oil on it, add ginger and green chilies . Stir for 1 minute . Add green peas, carrots and masala . Fry them for 3 minutes . 4 . Add mushrooms and fry for 1 minute . 5 . Then, add salt, Red chili powder, red pepper, soy sauce, lemon juice and green coriander . Mix the ingredient thoroughly . Cover it for 5 minutes . 6 . Add noodles to the mixture and stir to mix well . Turn off the flame and set the mixture aside to cool down . 7 . Cut the dough into 10 equal pieces . Roll the pieces using a rolling pin on a flat surface . Cut the pieces into 4 equal parts . 8 . Fold the pieces into a cone shape . Place the mixture in the cone shapes and cover the edge . 9 . Deep fry the samosas until they are lightly brown . Makes: serve with tomato sauce or any other sauce of your choice .

Cover it and put it aside for 15 to 20 minutes . 2 . For filling, heat oil in a pan . Put the onions, fry them until they are golden drown . 3 . Put all the other Ingredient List: and stir well . Keep adding some milk to prevent them from sticking on the pan . 4 . Cook for 5 minutes and set it aside to cool down . 5 . Take the dough and cut it into five equal balls . 6 . Roll the balls into circular shapes . Cut them into halves . 7 . Using your finger, roll the halves into a cone shape . Use water to seal the edges . 8 . Use a table spoon to put the filling in to the cones formed . 9 . Seal the open side and use water to seal . 10 . Heat oil in a frying pan . Put the samosa and deep fry . Ensure they are crispy and golden brown . 11 . Drain them and dry them using a kitchen towel . 12 . Serve the samosa when hot or wait them to cool down .

37) Chestnut Samosa Recipe

Fill the triangular shapes formed with the filling .

7 . Fold the open edge of the sheet and seal the samosa . 8 . To stick the edges, smear the beaten egg on them and stick them . 9 . Smear the egg yolk on the samosa sheets and sprinkle sesame seeds on them . 10 . Heat oil in a frying pan . Deep fry the samosas for 20 - 30 minutes until they are nicely browned and are crispy . 11 . Remove the samosas and dry them . 12 . Serve with yoghurt and any sauce of your choice .
