Introduction

My family and I have been avid lovers of the outdoors, especially when preparing our meals in the great outdoors! One of the unique rituals of becoming one with nature is nothing like a prepared meal out in the fresh air! Our campfire is like the circle of life on camping trips! Everyone gathers around it to prepare meals over its flames, share campfire stories, and sing a few songs or roast marshmallows under the stars! Spending some quality time with your loved ones, whether it is while having a backyard barbecue or on a camping trip—is indeed very special. You are helping to strengthen your bonds with one another! A way you can accomplish this is by gathering together sharing a special meal in celebration of your love for one another! It definitely can be challenging in trying to get your loved ones together, but in the end, your efforts to do so will be well worth it. Just imagine the fun times you will have with those close to your heart when preparing this fun collection of outdoor/camp-style recipes!

Lemon Buttermilk Hotcakes

Here is a tasty recipe for hotcakes that is not only yummy but healthy camping fare! Prep Time: 12 minutes Cook Time: 30 minutes Servings: 12 hotcakes per batch Ingredients: Hotcakes Mix:

2 cups flour, whole wheat 2 cups flour, all-purpose 2 ½ cups of rolled oats, regular 2 tablespoons baking powder 1 tablespoon baking soda 1/3 cup brown sugar, packed 1 ½ cups buttermilk, dried 3 lemons, fresh, zest only 2 teaspoons sea salt Ingredients for 1 hotcakes batch: 2 cups of your above hotcakes mixture 2 eggs, large ¼ cup of vegetable oil Suggested Toppings for Hotcakes: Sliced berries such as strawberries or blueberries, butter (softened) and Syrup-maple or berry Directions: 1. To prepare your hotcakes, whisk 2 cups of mixture, 1 cup of filtered water, 2 tablespoons of oil, and eggs combined in a large mixing bowl. Whisk the mixture until smooth. 2. Heat your skillet over medium heat, such as on a camp stove. Add ½ a tablespoon of oil to the skillet.

3. Ladle into skillet ¼ cup portions for hotcakes. Cook the hotcakes, flipping them until they are golden brown on both sides. 4. Add some more oil to the pan and repeat step 3 until you have made the whole batch of hotcakes. 5. Serve your hotcakes with toppings of your choice, such as syrup, butter, and berries.

Breakfast Salmon Burrito

Make these fun salmon and cream cheese breakfast burritos on your grill or campfire! Prep Time: 10 minutes Cook Time: 10 minutes Servings: 4 Ingredients: 8 eggs, large 1 tablespoon vegetable oil ½ teaspoon sea salt 2 tablespoons milk, 2%

2 tablespoons chives, chopped 1 teaspoon pepper, ground 1 cup tomatoes, diced 2 halved jalapenos, sliced and seeded 8-ounces salmon, smoked, bite-size cubed pieces ½ cup softened cream cheese, reduced-fat 4 flour tortillas, large salsa for serving—optional Directions: 1. Heat your oil in a skillet over high heat. 2. Add your eggs, milk, then scramble. Cook the scrambled eggs until just set. Add the salmon, pepper, salt, tomatoes, and chives. 3. Spread 2 tablespoons of cream cheese onto the middle of each burrito. 4. Spoon your egg mixture evenly over burritos, then roll and tuck the ends. 5. Serve your burritos with some salsa and enjoy!

Grilled Nutella & Strawberry Sandwich

Prepare this wonderful treat when the sun is going down, and you are enjoying the outdoors beside your campfire! Prep time: 5 minutes Cook Time: 8 minutes Servings: 1 Ingredients: 2 slices of white bread ½ cup strawberries, sliced 1 tablespoon Nutella butter, soft Directions:

1. Spread a bit of butter on one side of the pie iron. 2. Place one slice of your bread on the pie iron. 3. Spread the Nutella onto your bread slice. 4. Cover the Nutella with sliced strawberries. 5. Cover with a buttered second piece of bread. 6. Prepare over semi-hot coals until crisp and warm. Flip the pie iron over and then cook the second side. Serve and enjoy!

Sausage Potato Breakfast Foil Wrap Pack

A tasty foil-pack breakfast is offering a pleasing aroma to your campsite! Prep: 15 minutes Cook Time: 35 minutes Servings: 4 Ingredients: 1 green pepper, diced 1 sweet red pepper, diced 1 sweet yellow pepper, diced 1 (14-ounce) package of turkey kielbasa, sliced and smoked

1 onion, chopped 2 potatoes, large, wedge cut 4 teaspoons olive oil 4 teaspoons lemon juice, fresh ½ teaspoon garlic powder ½ teaspoon pepper, ground lemon wedges, fresh (optional) Directions: 1. Dice your peppers up and add to a mixing bowl. Add the remaining ingredients into the bowl and stir to combine. 2. Divide your mixture equally onto four double slices of foil. Fold the foil around the mixture and tightly seal. 3. Grill foil packs over medium heat for 35 minutes or until the potatoes are tender. 4. Remove the packs from the grill, then place them on serving dishes. 5. Carefully open foil packs and allow the steam to escape. Serve and enjoy!

Potato & Chipotle Camp-Style Breakfast Scramble

A recipe that is one of my family's favourite camp-style meals! Prep Time: 15 minutes Cook Time: 30 minutes Servings: 4 Ingredients: For Chipotle Potatoes: 1 lb. Potatoes, peeled and sliced into small cubes 1 poblano chili, large, diced ¼ teaspoon ground black pepper ¼ teaspoon sea salt

4 green onions, chopped 1 (7-ounce) can of chilies, chipotle, in adobo sauce 1 tablespoon olive oil For scramble: 2 tablespoons milk, whole 8 eggs, large ¾ cup cheddar cheese, shredded 2 tablespoons butter, unsalted ¼ teaspoon sea salt ¼ teaspoon ground pepper 2 cups tomato salsa, fire-roasted 2 tablespoons cilantro, chopped cream Fraiche Corn tortillas, warm Directions: 1. Whisk your eggs, milk, salt and pepper in a mixing bowl. Set bowl aside. 2. Place a large skillet over medium-high heat, and melt butter. Add your potato mixture, and cook for about 20 minutes. Occasionally stir when needed. 3. Add your egg mixture to the skillet, then reduce the heat to medium. Cook and stir the scramble; add the cheese and cilantro during the last minute. Season the mixture as desired. Spread the scramble mixture over tortillas, garnish, serve and enjoy!

Sweet Treats:

Giant Oreo Skillet Cookie

Here is a yummy treat to serve while enjoying the outdoors—with only two ingredients! Prep Time: 10 minutes Cook Time: 20 minutes Servings: 8

Ingredients: 1 bag of Oreo cookies 1 tube of prepared cookie dough, chocolate chip, 30-ounce Directions: 1. Lightly press the dough into the bottom of a large skillet. 2. Chop up the Oreo cookies to add to the top of the dough. 3. Press the crushed cookies into the dough. 4. Bake the cookie in the barbecue set to 350° Fahrenheit for 20 minutes. When the cookie reaches a golden brown colour, remove it from the barbecue. Allow the cookie to cool before serving.

Cinnamon Roll-Ups

Cook these tasty snacks over your campfire in just five minutes or so! Prep Time: 10 minutes Cook Time: 5 minutes Servings: 8 Ingredients: 1 tablespoon ground cinnamon ¼ cup sugar, granulated 1 package crescent rolls, cooled in the fridge Directions:

1. Combine your cinnamon and sugar in a small mixing bowl. 2. Separate the crescent rolls, wrap them around skewers. 3. Roll your skewer rolls in the cinnamon and sugar. 4. Cook the rolls over your campfire for about 5 minutes and rotate often. Serve and enjoy!

Peanut Butter Chocolate Camp-Style Burritos

Here is a camp-style treat using peanut butter and chocolate that is sure to please! Prep Time: 5 minutes Cook Time: 10 minutes Servings: 1

Ingredients: 2 tablespoons marshmallows, mini 2 tablespoons chocolate chips, mixture 2 tablespoons peanut butter, creamy 1 flour tortilla, large Directions: 1. Spread your peanut butter on your tortilla. 2. Sprinkle your marshmallows and chocolate chips over peanut butter. 3. Fold mixture into the burrito, and wrap it up in foil. 4. Heat over your campfire for 10 minutes or until heated. Serve and enjoy!

Grilled Blueberry Cobbler

A super easy recipe that makes for a perfect camp-style treat! Prep: 10 minutes Cook Time: 10 minutes Servings: 8 Ingredients: 1 tube of biscuits, buttermilk ¼ cup sugar, granulated

2 tablespoons flour, all-purpose 4 cups blueberries, fresh Directions: 1. Heat your grill to about medium heat setting. 2. Wash your blueberries, add to the mixing bowl, along with sugar and flour. Mix well to combine. Transfer the mixture into an 8×8 baking pan. 3. Put your baking pan on your grill, then close the lid. Cook for 10 minutes, and briefly stir. Cook for another 10 minutes; or until berries have released most of their juices. The mixture should swell up in the pan. 4. Add one layer of biscuits to the top of the blueberry mixture, use the entire tube. Close your grill lid and cook for another 10 minutes or until the cobbler is golden brown. 5. Remove your baking pan from the heat, and allow it to cool, then serve and enjoy!

Grilled Monkey Bread

A surefire winner at the campsite is grilling up some tasty monkey bread! Prep Time: 10 minutes Cook Time: 20 minutes Servings: 8 Ingredients: 1 stick butter, salted ½ cup sugar 2 tablespoons cinnamon ½ cup brown sugar 1 can biscuit dough, buttermilk, keep cool in the fridge until ready

to use Directions: 1. Line a cake pan with some foil. Grease the foil with butter. 2. Open your can or tube of biscuit dough and slice it into quarters. 3. Mix ½ cup white sugar and 2 tablespoons of cinnamon in a small mixing bowl. 4. Pour the cinnamon mixture into a plastic bag. Add biscuits into the bag and shake to coat well. Add your coated biscuits to the prepared cake pan. 5. Place some foil on top of the cake pan, and wrap the pan with foil and seal well. 6. Bake when you have dying coals. Bake for 10 minutes, or until biscuits become puffed up and cooked. Cool biscuits, then serve and enjoy!

Chapter 2. Outdoor/Camp-Style Main Meal Recipes

Cast Iron Hot Dogs & Beans

Here is a camp-style dish that everyone is sure to love that is easy to make! Prep Time: 10 minutes Cook Time: 20 minutes Servings: 6 Ingredients: 1 tablespoon olive oil 1 onion, diced 2 garlic cloves, minced 1 can (15-ounce) white beans, rinsed

2 tablespoons molasses, pure 4 plum tomatoes, chopped 2 teaspoons Worcestershire sauce 2 teaspoons red wine vinegar 6 beef/chicken hot dogs (your choice) 6 hot dog buns sea salt and ground pepper as desired for toppings, use: ketchup, relish and mustard Directions: 1. Preheat the grill to a medium heat setting; once the grill is hot, oil the grates with a bit of canola oil. 2. Heat your olive oil in a heavy skillet over direct heat. Add the diced onions, stir until tender, for about 4 minutes. 3. Add the tomatoes, garlic, molasses, and beans. Season recipe to your taste. Stir occasionally, cooking until the tomatoes have broken down. The process will take about 20 minutes, remove the skillet from heat, add your Worcestershire sauce and vinegar. 4. Grill the hot dogs over direct heat for about 5 minutes. Serve in the buns with your favourite toppings and beans. You can whip this recipe up on your backyard barbecue or over your campfire!

Grilled Onion Brats

A recipe that owes its beginnings to Germans' methods in grilling brats makes for a perfect camp-style meal! Prep Time: 12 minutes Cook Time: 40 minutes Servings: 10 Ingredients: 3 garlic cloves, chopped 2 onions, sliced ¼ cup butter, melted 2 lbs. Bratwurst, fresh

4 (12-ounce) bottles of beer, dark 10 hot dog buns Directions: 1. Preheat your outdoor grill on the high heat level, and grease the grill lightly with oil. 2. Melt your butter in a large skillet over medium heat. Stir in the onions, and cook them until they are translucent and tender. 3. Add your garlic, and continue to cook for another 2 minutes. Add the beer and allow the mixture to simmer on the grill. 4. Grill the brats for about 35 minutes and turn often. Remove from your grill, then simmer in beer sauce for 10 minutes. Serve hot and enjoy!

Grilled Shrimp

A yummy shrimp recipe that is simple to prepare that will be eaten up fast! Prep Time: 12 minutes Cook Time: 3 minutes per side Servings: 4 Ingredients: 2 lbs. Shrimp, large, peeled and deveined 1 garlic clove, large 2 teaspoons lemon juice ½ teaspoon cayenne pepper 1 teaspoon sweet paprika

1 teaspoon sea salt 2 tablespoons olive oil 2 teaspoons lemon juice, fresh garnish with: fresh lemon wedges Directions: 1. Preheat your campfire grill to a medium heat setting. 2. In a small bowl, combine your sea salt, garlic, cayenne pepper, and sweet paprika. Stir in your lemon juice along with oil to form a paste. Toss your shrimp into a large mixing bowl along with the paste. Toss until shrimp are coated with the paste. 3. Lightly oil the grill grate. Cook your shrimp on the grill for 3 minutes per side or until they are opaque. Transfer shrimp to a serving dish. Add lemon wedges as a garnish. Serve and enjoy!

Camp-Style Jalapeno Nachos

Have fun creating some tasty camp-style nachos in a skillet while enjoying the outdoors! Prep Time: 10 minutes Cook Time: 20 minutes Servings: 4 Ingredients: 1 lb. Of ground beef bunch of green onions, finely sliced 1 jalapeno pepper, sliced thinly 1 bag nacho dipping chips

2 cups iceberg lettuce, finely chopped 2 cups cheddar cheese, shredded 1 large tomato, diced taco sauce or salsa (optional) Directions: 1. Cook your ground beef in a heavy skillet over an outdoor grill until no longer pink. Create a well in the middle of your meat. Add the jalapeno and green onions. 2. Stir often while cooking mixture, for about four minutes. mixture to a bowl. Line your skillet bottom with nacho chips.

3. Evenly pour the ground beef mixture over the nachos. Top with lettuce, cheese, tomatoes, and taco and salsa sauce if desired. Serve and enjoy!

Pineapple Chicken Kebabs

Here is a chicken kebabs recipe that is a family favourite to prepare over an outdoor grill! Prep Time: 10 minutes Cook Time: 10 minutes Servings: 4 Ingredients: 1 pineapple, cubed 1 packet of the dry rub mix ½ cup barbecue sauce, spicy ¾ cup pineapple juice

4 chicken breasts, skinless, boneless and cubed 1 tablespoon cilantro, fresh chopped Directions: 1. Combine the barbecue sauce in a small bowl, along with pineapple juice, and rub mix. 2. Add alternating pieces onto skewers of two pineapple cubes and 3 chicken cubes per skewer. Coat the chicken cubes with sauce and sprinkle with cilantro. 3. Grill your kebabs for about 5 minutes per side or until fully cooked. Serve kebabs with extra barbecue sauce to use as a dip and enjoy!

Big Grill Juicy Burger

You are sure to enjoy this recipe for juicy burgers cooked over an outside grill! Prep Time: 12 minutes Cook Time: 10 minutes Servings: 8

Ingredients: 1 egg, beaten 2 lbs. Of ground beef 3 tablespoons of evaporated milk ¾ cup bread crumbs, dry 2 garlic cloves, minced 1/8 teaspoon cayenne pepper 2 tablespoons Worcestershire sauce Directions: 1. Preheat your grill to a high level of heat. 2. Combine your bread crumbs, ground beef, egg, Worcestershire sauce, garlic, evaporated milk, and cayenne pepper. Using your hands, mix the ingredients well. Form eight burger patties. 3. Oil your grill lightly. Grill your burger patties for about 5 minutes per side, or until they are done as you desire. Serve and enjoy!

Rosemary Chicken Kebabs

Try these chicken kebabs with rosemary and ranch dressing; they will melt in your mouth! Prep Time: 12 minutes Cook Time: 15 minutes Servings: 6 Ingredients: 5 halved chicken breasts, boneless, skinless, cubed into 1-inch cubes ½ cup olive oil 3 tablespoons Worcestershire sauce

½ cup ranch salad dressing 2 teaspoons sea salt 1 teaspoon lemon juice, fresh 1 tablespoon rosemary, fresh minced 1 teaspoon white vinegar ¼ teaspoon black ground pepper Directions: 1. In a bowl, mix your dressing, oil, Worcestershire sauce, lemon juice, vinegar, sea salt, and pepper. Allow mixture to stand for 5 minutes. 2. Add your cubed chicken to the bowl, stir to coat. Place the bowl in the fridge to marinate for 30 minutes. 3. Preheat your grill to high heat. Add the chicken onto your skewers, and discard the remaining marinade. 4. Oil your grill grate lightly. Grill your eight skewers for about 12 minutes or until they are no longer pink in colour. Juices should be running clear. Serve and enjoy!

Lamb Burgers & Potatoes

Prepare this tasty recipe over the campfire, and share a meal with your loved ones under a starry sky! Prep Time: 10 minutes Cook Time: 20 minutes Servings: 4 Ingredients: ½ lb. Beef, ground ½ lb. Lamb, ground

¼ teaspoon (each) nutmeg, cumin, and coriander ½ teaspoon garlic powder ¼ teaspoon onion powder sea salt as needed 2 teaspoons oregano, fresh chopped black ground pepper as needed 2 cups potatoes, diced 3 tablespoons butter, softened 1 cup tomatoes, diced 1 tablespoon dill, fresh chopped 1 cup feta cheese Directions: 1. Prepare your hot campfire, and place a grate over the top of it. Set a heavy skillet on top of your grate. 2. Pat your lamb and beef dry. Add meat to the mixing bowl, along with oregano, coriander, onion powder, cumin, ground nutmeg, and garlic powder. Season your meat as desired. 3. Mix meat mixture well to combine ingredients. Form four meat patties. Now, make an indentation in the center of each individual meat patty. Cover. Set patties aside. 4. Add your butter to the skillet, and allow it to melt. Add your diced potatoes to the skillet. Cook your potatoes for about 10 minutes, or until they begin to crisp, then add the rest of the garlic powder with them. 5. Push the potatoes gently to the edge of the skillet. Add the meat patties to the skillet. Cook your patties for 5 minutes per side or until cooked. Sprinkle patties with dill—top patties with cheese and tomatoes. Serve hot and enjoy!

Grilled Pork Chops & Brown Sugar

Here is an easy grilling recipe for pork chops that you and your family will love! Prep time: 12 minutes Cook Time: 12 minutes Servings: 6 Ingredients: 6 pork chops, boneless

4 tablespoons vegetable oil 1 tablespoon soy sauce sea salt and ground pepper as needed ½ teaspoon ginger, ground ½ cup water 2 teaspoons corn starch ½ cup apple juice, pure ½ cup brown sugar, light Directions: 1. Preheat your campfire grill to a high level of heat. 2. Mix your brown sugar, apple juice, oil, ginger, and soy sauce in a saucepan. 3. Mix the water along with corn starch in a small bowl. Whisk this into your brown sugar mixture and stir until it thickens. 4. Place the pork chops on the preheated grill, then brush them with sauce. Turn over halfway through cook time, about six minutes per side. Remove chops from grill, then serve along with leftover sauce and enjoy!

Preheat your grill to medium heat—oil the grate lightly. 2. Add your potatoes to a mixing bowl, then add in 2 tablespoons of olive oil and toss to coat. 3. A great and tasty grilled shrimp recipe that is easy to makeover your campfire grill! Prep Time: 12 minutes Cook Time: 10 minutes Servings: 8 Ingredients: 3 tablespoons Dijon mustard 2 ½ tablespoons olive oil ¼ cup butter, unsalted melted ½ cup basil leafs, fresh minced

4 lbs. Shrimp, peeled and deveined, fresh 3 garlic cloves, minced sea salt and white pepper as needed Directions: 1. Mix the oil and butter in a shallow dish. Add the garlic, basil, mustard, and lemon juice. Season mixture as desired. 2. Add your shrimp and toss to coat well. Cover and place in your fridge for 2 hours. 3. Preheat your campfire grill over high heat. Remove your shrimp from the marinade. 4. Oil your grill grate lightly. Place the skewers on your grill. Easy fries to prepare camp-style, just wrap in foil, bake and enjoy! Prep Time: 12 minutes Cook Time: 35 minutes Servings: 4 Ingredients: 4 garlic cloves, minced

2 tablespoons chives, fresh chopped 2 tablespoons olive oil 1 lb. Red potatoes, wedge cut 2 tablespoons sour cream 1 cup cheddar cheese, shredded sea salt & black ground pepper as needed ½ teaspoon red pepper flakes Directions: 1. Prepare your outdoor grill with high heat. Line a baking sheet with a foil sheet. 2. Whisk your garlic, pepper flakes, oil, sea salt, and pepper in a small bowl. 3. Add your potato wedges to the prepared baking sheet. Carefully, fold the sides of foil up and over the wedges. 4. Spoon the mixture over the top of the potato wedges. Fold sides of the foil over potatoes, covering them thoroughly, making sure to seal the package. 5. Set the package on your grill and allow to bake for 35 minutes. Sprinkle the top of wedges with cheese, then place back onto the grill for a few minutes or till the cheese has melted. Serve and enjoy!

Allow the coals of your campfire to cook up these sandwiches for you in a few minutes! Prep Time: 8 minutes Cook Time: 15 minutes Servings: 6 Ingredients: 12 rolls/large buns 1 lb. Of Ham, deli-sliced 12 slices Swiss cheese 1 tablespoon brown sugar

1 tablespoon onion, dried 1 ½ tablespoon Dijon mustard ½ cup butter, unsalted and melted Directions: 1. Prepare six large sheets of heavy-duty foil. 2. Divide your ham slices between the twelve rolls. Top each roll with a large slice of Swiss cheese. Place roll tops in place, add two sandwiches in each foil piece. 3. Mix your brown sugar, melted butter, dried onion, and mustard in a small bowl. Evenly pour your mixture over the top of each sandwich. 4. Fold the sides of each packet up, and seal shut. Place the packets on top of the warm coals of the campfire. Turn packets often, cooking until the cheese has melted, and rolls are lightly toasted for about 15 minutes. Serve and enjoy!

I am sure you will enjoy the spices and flavours that these burgers offer! Prep Time: 10 minutes Cook Time: 8 minutes Servings: 4 Ingredients: 4 slices mozzarella cheese 1 chipotle chili in adobo sauce, chopped 1 lb. Turkey ground 2 tablespoons cilantro, fresh chopped ½ cup onion, finely chopped

1 teaspoon onion powder 1 teaspoon sea salt 1 teaspoon garlic powder 4 split hamburger buns, toasted ¼ teaspoon black ground pepper Directions: 1. Preheat your outdoor grill to a high level of heat. Oil the grate lightly. 2. In a large bowl, combine turkey, onion, chipotle chili pepper, garlic powder, onion powder, sea salt, and ground pepper. Mix mixture well to combine ingredients. Form mixture into four patties. 3. Cook your turkey burgers on the grill until the center of turkey patties is not pink anymore. This process generally takes about 4 minutes per side of patties. 4. 4 basil leafs, fresh chopped 3 garlic cloves, minced Directions: 1. Preheat your grill over your campfire or outdoor barbecue. 2. Put the tilapia fillets onto a large piece of foil. Season the fillets as desired. Add 1 tablespoon butter on top of fillets. Sprinkle with tomato, garlic and basil. Pour the wine over the top of Tilapia. 3. Fold the foil up and around the Tilapia and seal the packet. Place packet on grill and cook for 15 minutes, or until the fish is easily flaking. Serve and enjoy!

Classic Grilled Barbecued Ribs

There is nothing like enjoying some camp-style tender ribs that are so full of flavour! Prep Time: 15 minutes Cook Time: 3 ½ hours Servings: 8 Ingredients: 4 lbs. Pork ribs, baby back 4 garlic cloves, thinly sliced 1 tablespoon sugar, granulated 1 tablespoon sweet paprika

2 teaspoons sea salt 2 teaspoons black ground pepper 2 teaspoons chili powder 2 teaspoons cumin, ground ½ cup brown sugar ½ cup ketchup ½ cup apple cider vinegar ¼ cup Worcestershire sauce 2 tablespoons onions, chopped 1 garlic clove, crushed ½ teaspoon mustard, dry Directions: 1. Preheat your grill to high heat level. 2. Place the ribs on a rack inside a large piece of foil. Add the garlic cloves to the package. Cover and seal, then place on grill and bake for 2 ½ hours. Allow ribs to cool. 3. Combine your ground pepper, sweet paprika, sea salt, sugar, chili powder, and cumin in a small bowl. Rub this spice mix over the cooled ribs. 4. In a small skillet or pan, mix your apple cider vinegar, chili sauce, ketchup, onion, lemon juice, dry mustard, Worcestershire sauce, and brown sugar. 5. Mix over heat and simmer for a few minutes. Reserve a bit of sauce for basting ribs, and the rest use for a dipping sauce. 6. Cover the ribs with basting sauce, then place the package back onto the grill for about 12 minutes. Serve ribs with remaining sauce and enjoy!

Southwest Chicken Foil Wrap Packets

Cook this yummy chicken recipe on your campfire or grill with little to no fuss! Prep time: 15 minutes Cook Time: 45 minutes Servings: 2 Ingredients: 2 chicken breasts, skinless and boneless 1 cup corn, frozen 1 teaspoon taco seasoning 1×15-ounce can black beans, rinsed & drained

½ cup salsa 1 cup pepper jack cheese, shredded sea salt & black ground pepper, as needed For garnishing & side (optional): fresh chopped cilantro, mashed avocado, sour cream Directions: 1. Use two large pieces of foil to make two packets. Mist foil lightly with non-stick cooking spray. 2. Stir in the black beans, corn, and taco seasoning. Divide between two packets of foil. 3. Peel and chop the potatoes, then rinse them. 3. Make package out of foil, and spray the inside with cooking spray. 4. In a mixing bowl, mix your potatoes with ranch dressing. Toss to coat potatoes. 5. Layer the potatoes in the foil package. Top the potatoes with cheese shreds, bacon and parsley—season as desired. 6.
