Duration : 30 minutes Servings : 6 Ingredients : 2 tablespoons of divided olive oil 2 medium sized leeks, chopped with only white and green parts 2 eggs Half cup of sour cream 2 tbsp . of coarsely chopped parsley 3 / 4th cup of fontina cheese Salt and pepper to taste Method : 1 . Preheat the oven at 350 degrees and place a rack in the upper one third part of the oven . Now heat one tablespoon of oil in a nonstick and oven proof skillet and add leeks into it . 1 . Heat up the oven to 400 degrees and start preparing salsa . For the salsa, place the tomatoes and poblano peppers on medium heat on a grill or on the burner directly . After partial charring and blistering of the vegetables skins, remove them from flame . Now cut poblanos into strips and then keep them aside . 2 . Cut tomatoes into cubes and then put them in a bowl . Put in onions, cilantro, jalapeno, lime juice, pepper and salt to it and then Put salsa in refrigerator to chill . 3 . For making chips, put tortillas over each other and cut them into wedge shapes . Spread them on a baking sheet and sprinkle salt over them . Bake them in the oven for 10 - 12 minutes or till they become crisp . Now remove from oven . 4 . For making frittata, heat oil in an oven safe skillet and add eggs in it . Stir for the 1st minute and then leave eggs to rest for half a minute . Now push frittata to a side of the pan to enable the uncooked eggs may run on the other side and get cooked . In the still moist phase of frittata, add salt, pepper and cheese . 5 . On the top of cheese, place the poblano strips and rest in the oven for 4 to 5 minutes . Now stick the tortillas on the sides of skillet . Cut frittata into wedges and serve with salsa .

Recipe 08 : Hot or Cold Vegetable Frittata

This frittata can also be made from the left over vegetables in your fridges . Duration : 90 minutes Servings : 8 Ingredients : 3 tbsp . of vegetable oil 1 ½ cups of chopped zucchini 1 ½ cups of fresh mushrooms ¾ cup of chopped onion and chopped green bell pepper 1 clove of minced garlic 6 beaten eggs 1 . 4th cup of half and half cream 8 oz . of diced cream cheese 2 cups of shredded cheddar cheese 4 slices of cubed bread 1 / 4th tsps . of black pepper Method : 1 . Now beat eggs with cream in a large bowl and stir in cream cheese, cheddar cheese, bread cubes and vegetables . After seasoning, put the mixture in baking dish . 4 . Duration : 25 minutes Servings : 2 Ingredients : 1 tsps . of olive oil Half cup of chopped onion Mince of 1 clove of garlic Half cup of diced green bell pepper 1 zucchini halved into slices 2 cups of diced and cooked potatoes 1 cup of fresh chopped tomatoes 2 tbsp . of black olives 4 eggs Salt and pepper to taste 1 / 4th tsps . of dried oregano 1 pinch of cayenne pepper

Half tomato sliced 1 / 4th cup of shredded mozzarella cheese 1 / 4th cup of grated parmesan cheese Method : 1 . Preheat the broiler of the oven and take a frying pan with an oven proof handle . Heat oil in the pan and add onions to it . Sauté the onion and add garlic and green bell pepper on low flame . Sauté until all the vegetables are browned . Now add zucchini and continue cooking until they become crisp to tender . Now add potatoes to this mixture of vegetables and combine well while cooking frequently until the potatoes are heated up . 2 . Now add tomatoes and olives and stir them well so that they combine with other ingredients and the tomatoes start giving their juice . 3 . Now beat the eggs in a bowl and add salt, pepper, oregano and cayenne . After all the vegetables are cooked, pour the egg mixture over them . 4 . Arrange tomato slices on top and pour mozzarella and Parmesan cheese over them . Cook on low flame and heat under broiler until the cheeses change their color .

Now combine the quinoa, eggs, and egg whites, zucchini, cheeses, ham and white pepper in a large bowl and thoroughly mix them . After the mixture is combined, spoon out in muffin tray already fitted with muffin cups . 3 . Now bake this mixture in a preheated oven until the edges of frittata are golden brown . Cook for 5 - 6 minutes or until it turns light green . After this, add asparagus, cook for 1 minute until its color changes . In the same way, add spinach and salt and then finally add cooked potatoes . Mix them all and cook well for 5 minutes . Keep stirring . 4 . Take another bowl, add cracked eggs, pepper, cayenne and salt in it . Whisk for half a minute . 5 . Empty this egg mixture in vegetables and cook over medium flame . Spread goat feta cheese over it evenly leaving one ounce behind . Later on, garnish with remaining cheese and turn off flame . 6 . Now put skillet in preheated oven for 13 to 15 minutes .
