Chapter 1: Drinks to Get the Party Started!

1. Beer Shandy

The professor loves beer and is often seen with a bottle of it in his hand. Denver loves beer too! Serving size: 1 Cooking time: 5 minutes Ingredients: 15 ounces orange juice 20 ounces beer Mint leaves Instructions: 1. Add the orange juice and beer to a glass and mix. 2. Sprinkle mint leaves and serve.

2. Whiskey Sour

Tokyo loves whiskey. She carries a bottle around and drinks straight from the bottle. Serving size: 1 Cooking time: 5 minutes Ingredients: 2 ounces Whiskey 1 ounce vermouth 3 ounces chocolate bitters Instructions: 1. Add the bitters, vermouth and whiskey to a glass and mix. 2. Serve and enjoy.

3. Wine Cocktail

Everyone enjoys wine on the show! It’s served on every occasion! Here is a recipe for a wine cocktail. Serving size: 1 Cooking time: 5 minutes Ingredients: 1 bottle rose wine 1 cup blueberries 12 ounces lemonade 1 cup ginger ale Instructions: 1. Add the wine, blueberries, lemonade and ginger ale to a jug and combine. 2. Serve and enjoy.

4. Champagne

Professor toasts with champagne at Sergio’s wedding. Serving size: 1 Cooking time: 5 minutes Ingredients: 1 sugar 4 dashes Angostura bitters 1 cup champagne Lemon twist Instructions: 1. Add the champagne, bitters and sugar to a glass. 2. Garnish with lemon twist and serve.

5. Cider

As we know, the professor sets up a small cider production unit in his garage. He even gives Murillo a taste of it. Serving size: 1 Cooking time: 5 minutes Ingredients: 2 tablespoons cider vinegar 1 tablespoon lime juice 1 teaspoon honey 2 cups hot water Instructions: 1. Add the water, lime, cider and honey to a jug and combine. 2. Pour into glasses, serve and enjoy.

6. Coffee

Murillo is often spotted with a cup of coffee, especially at the station. Serving size: 1 Cooking time: 20 minutes Ingredients: 2 teaspoons instant coffee 2 tablespoons sugar 3 tablespoons hot water 1 cup hot milk Instructions: 1. Add the coffee, sugar and hot water to a glass and mix. 2. Pour the hot milk and combine. 3. Serve and enjoy.

Chapter 2: Starters and Main Course

7. Sauteed Mushrooms

Here is a recipe for sauteed mushrooms that they enjoy. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 lb mushrooms, chopped 1 tablespoon soy sauce ¼ cup white wine 1 thyme sprig 1 tablespoon garlic, minced Chives to sprinkle Instructions: 1. Chop the mushrooms. 2. Add the butter to a pan and add the garlic and mushrooms along with the soy sauce, wine and thyme. 3. Cook till soft and serve with chives on top.

8. Grilled Steak

One dish they enjoy during training week is the grilled steak. Serving size: 4 Cooking time: 30 minutes Ingredients: 5 tablespoons butter 1 tablespoon garlic, minced 1 tablespoon parsley 4 steak strips Salt and pepper to taste Instructions: 1. Add the butter to a saucepan and toss in the garlic. 2. Add steak and season it with salt and pepper and cook for 5 minutes on both sides. 3. Sprinkle parsley and serve.

9. Grilled Potatoes and Tomatoes

Everyone at the tables has a generous serving of potatoes and tomatoes with their lavish meal. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 lb potatoes, peeled and chopped 1 lb small tomatoes 1 tablespoon garlic, minced 2 tablespoons oil Salt and pepper to sprinkle Instructions: 1. Add the oil to a saucepan and toss in the garlic and potatoes. 2. Sauté till brown and add the tomatoes, salt and pepper. 3. Serve and enjoy.

10. White Sauce

Here is a simple white sauce to go with the steak and vegetables. Serving size: 4 Cooking time: 20 minutes Ingredients: 2 tablespoons butter Salt and pepper to taste 2 tablespoons flour 1 cup milk Parsley to sprinkle Instructions: 1. Add the butter and flour to a pan and whisk. 2. Add milk, salt and pepper and combine. 3. Once thick, sprinkle the parsley.

4. Serve and enjoy.

11. Paella

Denver and Rio enjoy delicious paella and so do the rest of them. Serving size: 4 Cooking time: 40 minutes Ingredients: 2 tablespoons oil 1 tablespoon paprika 2 teaspoons oregano 2 lb chicken 2 cups chicken stock 2 lemons, juiced 1 tablespoon garlic, minced 1 teaspoon pepper flakes 2 cups rice, cooked 1 teaspoon saffron 1 bay leaf

1 lb chorizo, crumbled 1 lb shrimp, deveined Salt and pepper to taste Instructions: 1. Add the oil, paprika, salt, oregano and pepper to a bowl and toss in the chicken and combine. 2. Add the oil to a saucepan and toss in the chicken. 3. Add the garlic, pepper and rice and mix. 4. Add the chicken stock, lemon juice, saffron, bay leaf and parsley to a pot and boil. 5. Pour it over the paella and simmer. 6. Add the shrimp and cook till it’s no longer pink. 7. Serve and enjoy.

12. Garlic Mussels

Spaniards love mussels. Here is a delicious garlic mussel recipe to try out. Serving size: 4 Cooking time: 30 minutes Ingredients: 3 tablespoons butter 2 shallots, chopped 1 tablespoon garlic, minced 1 teaspoon pepper flakes ¼ cup white wine 2 lb mussels, scrubbed and cleaned 1 lemon, juiced ¼ cup parsley, chopped Salt to taste Instructions:

1. Add butter to a pan and toss in the shallots, garlic, pepper flakes and brown. 2. Add the wine and toss in the mussels. 3. Add lemon juice and stir. 4. Serve with a sprinkling of parsley.

13. Crab Curry

Crabs are popular in Spain. They are easy to make and delicious to taste. Here is a simple and tasty crab curry recipe to try out. Serving size: 4 Cooking time: 30 minutes Ingredients: 2 small cinnamon sticks 3 small star anise 1 onion, chopped 1 capsicum, chopped 1 tablespoon garlic, minced 2 whole crabs, cleaned 1 cup tomatoes, chopped 1 tablespoon coconut oil 1 cardamom pod, bashed 1 tablespoon cumin powder

1 tablespoon coriander powder Cilantro to sprinkle Instructions: 1. Carefully remove the meat from the shells of the crab and set it aside. 2. Add the oil to a pan and toss in the garlic, onion, cinnamon and cardamom. 3. Add the onions, bell peppers, cumin, coriander, turmeric and star anise. 4. Add the tomatoes, salt and pepper and combine. 5. Whizz the mixture till smooth and add to a saucepan. 6. Add the crab meat and combine. 7. Cook for 10 minutes. 8. Sprinkle cilantro and serve.

14. Pasta

Pasta is quite popular on the show and the characters are often seen digging into it. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 cup penne pasta Water to boil Salt to taste 1 teaspoon oil 1 teaspoon butter 1 tablespoon garlic, minced ½ onion, chopped 1 tomato, chopped 1 capsicum, chopped 1 small carrot, chopped

2 tablespoons peas Broccoli florets 3 tablespoons water ½ teaspoon mixed herbs-rosemary, oregano, thyme, sage 1 teaspoon chili powder Salt to taste 2 tablespoons corn starch Instructions: 1. Add the pasta to a pot of boiling water along with some salt. 2. Add the oil, butter and garlic and sauté. 3. Add the onion, tomatoes, capsicum, carrot, peas and broccoli and pour water. 4. Add the chili, herbs, salt and corn starch and whisk. 5. Add the pasta and combine. 6. Serve and enjoy.

15. Pepperoni Pizza

The gang has a lot of pizza stored to be eaten during the heist. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 pizza base 5 tablespoons marinara sauce 1 teaspoon garlic, minced ¼ cup parmesan cheese, grated 2 cups mozzarella cheese, grated 20 pepperoni slices Oregano and pepper to sprinkle Instructions: 1. Add the pizza base to a tray and apply the sauce over it. 2. Sprinkle the pepperoni, oregano and pepper.

3. Sprinkle the cheese and bake in a preheated 350 Fahrenheit oven for 20 minutes. 4. Serve and enjoy.

16. Easy Bread

Everyone loves bread with their meal! The whole gang has bread on their plates during their training days. Here is a simple recipe to try. Serving size: 4 Cooking time: 30 minutes Ingredients: 3 ¼ cups flour 2 teaspoons yeast 2 teaspoons salt 1 ½ cups warm water Flour to sprinkle Instructions: 1. Add the water, yeast and salt to a bowl and allow it to turn frothy. 2. Add the flour and knead. 3. Add the dough to a greased tray and bake in a preheated 30 Fahrenheit

oven for 30 minutes. 4. Serve and enjoy.

17. Mashed Potatoes

Here is a recipe for mashed potatoes. Serving size: 4 Cooking time: 35 minutes Ingredients: 4 lb potatoes, peeled and chopped 1 ¼ cups hot milk 15 tablespoons butter Salt and pepper to taste Parsley to sprinkle Instructions: 1. Add the potatoes in hot water and boil till soft. 2. Add to a bowl and mash. 3. Pour milk and whisk.

4. Season with salt and pepper and sprinkle parsley. 5. Serve and enjoy.

18. Meatballs

There is a bowl of meatballs right in front of the professor. Here is a simple recipe for meatballs. Serving size: 4 Cooking time: 30 minutes Ingredients: 2 cups breadcrumbs 1 cup milk 1 lb beef, minced 2 eggs ½ cup onion, chopped 1 tablespoon garlic, minced 2 tablespoons basil 2 tablespoons parsley 2 tablespoons rosemary 2 tablespoons oregano Salt and pepper to taste

1 cup parmesan, grated ¾ cup oil 1 cup marinara sauce Instructions: 1. Add breadcrumbs, milk to a bowl and allow it to soak. 2. Add the beef, pork, eggs, garlic, onion, parsley, oregano and cheese and mix. 3. Add salt and pepper and combine. 4. Add the oil to a pan and heat. 5. Make meatballs using the beef mixture and drop it in the oil. 6. Fry till golden. 7. Add the marinara sauce to a pan and add the meatballs. 8. Simmer for 10 minutes and serve.

19. Caesar Salad

Caesar salad is a popular salad that is savored by all. The professor, in particular, prefers salads as his main meal. Serving size: 4 Cooking time: 20 minutes Ingredients: 1 tablespoon garlic, minced 2 teaspoons mustard 1 teaspoon Worcestershire sauce 2 teaspoons lemon juice 2 teaspoons red wine vinegar ¼ cup olive oil Salt and pepper to taste 1 romaine lettuce, chopped ¼ cup parmesan, grated

Instructions: 1. Add the garlic, mustard, lemon juice and wine vinegar to a bowl and whisk. 2. Add the lettuce and cheese to a bowl and toss. 3. Drizzle the dressing and serve.

20. Easy Guacamole

Guacamole is always on the table as it goes with a lot of dishes like breads and starters. Serving size: 4 Cooking time: 20 minutes Ingredients: 2 avocados, chopped 1 lime, juiced 1 tomato, chopped 1 onion, finely chopped Salt and pepper to taste Instructions: 1. Add the avocados, onion, garlic, onion, salt and pepper and mix. 2. Serve and enjoy.

21. Chicken Inasal

The Professor and Murillo have a good time in Palawan. They are spotted savoring the delicacies the country has to offer. One of their best exports is chicken Inasal. Serving size: 4 Cooking time: 30 minutes Ingredients: 2 lb. chicken, chopped 2 tablespoons ginger, minced 1 cup lemongrass, chopped 1 cup vinegar 2 tablespoons garlic, minced ½ cup lemon juice ¼ cup sugar 1 cup lemon soda Salt and pepper to taste

For basting 3 tablespoons oil ½ cup butter Salt to taste 1 teaspoon lemon juice Instructions: 1. Add the chicken, lemongrass, salt, pepper, ginger, garlic, sugar, vinegar, lemon juice and lime soda to a bowl and combine. 2. Allow it to soak for 3 hours. 3. Add the butter, oil, salt and lemon juice to a small bowl. 4. Grill the chicken till brown and cooked through. 5. Use a brush to apply the basting sauce over it. 6. Serve and enjoy.

22. Lobster Salad

Palawan offers a large variety of seafood and lobsters are popular. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 lb. lobster meat, cooked 1 tablespoon lemon juice 4 tablespoons mayonnaise ½ cup celery, chopped 1 cup mixed salad leaves, chopped 1 avocado, chopped 1 tomato, sliced 1 cucumber, sliced Salt and pepper to taste Instructions:

1. Add the meat, celery, salad leaves, tomato, cucumber and avocado to a bowl and toss. 2. Add the lemon juice, mayonnaise, salt and pepper to a bowl and mix. 3. Pour over the salad and serve.

23. Garlic Fried Rice

The two recipes above are usually served with garlic rice. Serving size: 4 Cooking time: 30 minutes Ingredients: 3 tablespoons vegetable oil 2 tablespoons garlic, minced 4 cups rice, cooked Salt and pepper to taste 1 scallion, chopped 4 eggs Instructions: 1. Add the oil to a wok and heat. 2. Toss in the garlic and sauté till brown. 3. Beat the eggs and add to the wok and stir till it scrambles.

4. Add the scallion and rice and mix. 5. Serve hot.

Chapter 3: Desserts

24. Halo Halo

One of the most popular desserts in the Philippines is the Halo Halo. Here is a simple recipe to try out. Serving size: 4 Cooking time: 30 minutes Ingredients: Crushed ice 1 cup milk 1 cup sugar 2 large sweet potatoes, cooked and chopped 1 cup jackfruit, chopped 1 cup mango, chopped ½ cup sweet coconut flesh, chopped 1 cup sago 1 tub ice cream of your choice

Instructions: 1. Add a tablespoon of ice to a cup, followed by milk, potatoes, jackfruit, mango, sago pearls and coconut flesh. 2. Add the ice cream over it and serve.

25. Churros

Spaniards love churros. They are made using flour and sugar. The gang would surely love to bite into them at any given chance! Serving size: 4 Cooking time: 30 minutes Ingredients: 1 cup water 1 cup flour ¼ cup butter 1 tablespoon sugar 1 egg ½ teaspoon vanilla extract Vegetable oil to fry ½ cup sugar to coat 1 teaspoon cinnamon powder

Instructions: 1. Add the cinnamon and sugar to a bowl and combine. 2. Add the oil to a pot to heat. 3. Add the water, butter, sugar and salt to a bowl and whisk. 4. Add the flour combine. 5. Add the mixture to a saucepan and stir till well combined and sticky. 6. Allow it to cool down. 7. Add vanilla and eggs to the flour mixture and combine. 8. Transfer it into a piping bag and squeeze out ½ inch oblongs. 9. Fry them till golden brown and add to a plate. 10. Sprinkle sugar and cinnamon on top and serve.

26. Wedding Cake

Here is a wedding cake recipe like the one served at Sergio’s. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 cup sugar ½ cup butter 1 ½ cups flour ½ cup milk 2 teaspoons vanilla extract 2 teaspoons baking powder 2 eggs 2 cups cake icing Instructions: 1. Add the sugar and butter to a bowl and whisk till creamy.

2. Add the milk and butter and whisk. 3. Add the flour, baking powder and milk and combine. 4. Pour it into greased tin and bake in a preheated 350 Fahrenheit oven for 30 minutes. 5. Allow it to cool before applying the icing on top and on the sides. 6. Serve and enjoy.

27. Leche Flan

A leche flan is a Filipino and Spanish cross dessert that is loved by people from both countries. Serving size: 4 Cooking time: 30 minutes Ingredients: 10 eggs, yolks only 1 cup condensed milk 1 cup evaporated milk 1 cup sugar 1 teaspoon vanilla extract Instructions: 1. Separate the yolk from the whites and add them to a bowl. 2. Pour the condensed milk, evaporated milk and vanilla and whisk till combined.

3. Add the sugar to a saucepan and caramelize. 4. Add the caramel inside greased flan tins and swirl to spread. 5. Pour the yolk mixture and bake in a preheated 350 Fahrenheit oven for 10 minutes. 6. Serve and enjoy.

28. Dali Mask Cupcakes

The Dali mask is an important element of the show. All the heist recruits wear them to protect their identity. Here is a recipe to make cupcakes that look like the mask. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 2/3 cups flour 1 cup sugar 1 cup butter 1 teaspoon baking powder 2 tablespoons milk 4 eggs For icing ½ tablespoon cocoa powder

Red food color 1 cup Unsalted butter 1 cup white icing Black fondant, as required Instructions: 1. Add the sugar, butter and eggs to a bowl and whisk. 2. Add flour, baking powder and milk and combine. 3. Add the mixture into lined cupcake tins and bake in a preheated 350 Fahrenheit for 20 minutes or until baked. 4. To make the icing mix the cocoa powder, red food color and butter and combine. 5. Use it to frost the outer layer of the cupcakes. 6. Apply the white icing on top and use the fondant to make the features of the mask.

29. Golden Chocolate Bars

As we know, gold bars play an important role in the show. The whole mission is to steal gold bars from the bank. Here is a peanut butter bar to try out. Serving size: 4 Cooking time: 30 minutes Ingredients: 1 cup butter 2 cups sugar 2 cups creamy peanut butter 4 cups rice crispies 2 cups chocolate chips 4 tablespoons creamy peanut butter Instructions: 1. Add the butter and sugar to a bowl and whisk till well combined.

2. Add peanut butter and mix. 3. Toss in the rice cripies and mix till well combined. Be gentle so as not to crush them. 4. Press the mixture down in a lined baking dish. 5. Melt the chocolate chips and creamy peanut butter and combine. 6. Pour it over the crispies and refrigerate it for an hour or overnight. Cut it into pieces. 7. Serve and enjoy.

30. Beer Cake

This is one cake the professor and Denver would approve of! Serving size: 4 Cooking time: 40 minutes Ingredients: 2 cups flour 3 ½ cups sugar 1 teaspoon baking soda 5 ounces cocoa powder 8 ounces butter 11 ounces sour cream 2 tablespoons vanilla extract 4 eggs 2 cups beer Instructions:

1. Add the beer and butter to a pan and melt. 2. Add sugar and cocoa and blend. 3. Add eggs, sour cream and vanilla to a bowl and whisk till combined. 4. Add the flour and baking soda and combine. 5. Pour the beer mixture and whisk. 6. Add mixture to a greased baking tin and bake in a preheated 350 Fahrenheit oven for 50 minutes. 7. Slice and serve.

About the Author Contemporary Caribbean cuisine had never tasted so good before Rene Reed came into the scene. With about twenty years dedicated to building up a budding culinary career, Rene has worked in various top-end restaurants, hotels, and resorts as the head chef. Her dive into the food industry started in Michigan, where she trained with some of the best chefs on the block. Rene was an accountant at a top firm but didn’t feel a sense of accomplishment at the end of the day. Something was missing, and although Rene didn’t know it at that time, the answer was right under her nose. She discovered how relaxed and happy she felt when she was trying to whip up something in the kitchen for her family.
