Introduction

When preparing meals, you want them to look and taste great. However, the actual preparation and cooking can be challenging. This is especially true if you are working, you arrive home and tired, or you have other tasks to do. You might have planned to prepare meals for 30 minutes, but you end with only 10 minutes because of traffic or other delays. You are not alone since a lot of people relate to this. All the recipes you will find in this book are very fast to prepare. You also have an easy time completing the dishes because most of the ingredients are most likely in your pantry or fridge. If not, you can easily get them in your local grocery.

Recipes

Southern Catfish with Pecans

This catfish recipe can be your next favorite meal. It is yummy, fast, and simple. You can have it with a salad, biscuits, and fruits. Prep Time: 25 minutes Serving Size: 4 Ingredients: 4 catfish fillets ⅓ cup of finely chopped pecans 1 tsp Cajun seasoning ½ tsp dried thyme 2 tsp lemon juice 2 tbsp olive oil 2 tbsp grated Parmesan cheese 1 tbsp dried parsley flakes 1 tbsp dry bread crumbs

Procedure: 1. Preheat the oven to 425 degrees. 2. Mix the lemon juice, Cajun seasoning, thyme, and oil in a small bowl. 3. Mix the bread crumbs, 1 tbsp of the oil mixture, cheese, and pecans in a separate bowl. 4. Put the catfish fillets in a 15x10x1-inch baking pan and spread the excess oil mixture. 5. Pour the pecan mixture on the fillets and bake them for 10 to 15 minutes or until the fish can be easily flaked using a fork.

Hot Salsa Burgers

If you have always wanted to make your own burgers at home, this is your chance! You can create these juicy, yummy, and spicy burgers with just a few seasonings. Prep Time: 20 minutes Serving Size: 4 Ingredients: 1 lb. ground beef ½ cup of salsa 4 split and toasted Kaiser Rolls 1 tsp Creole seasoning ½ tsp crushed red pepper flakes ½ tsp garlic powder ½ tsp pepper Procedure:

1. Mix the salsa, Creole seasoning, garlic powder, crushed red pepper flakes, and pepper in a large bowl. 2. Add the beef and gently but thoroughly mix. Shape the beef mixture into half-inch thick patties. 3. Grill the patties with a cover on medium heat or broil 4 inches away from heat for 4 to 5 minutes on every side or until your thermometer reads 160 degrees. 4. Serve on Kaiser Rolls.

Citrus Scallops

If you often serve seafood to your family, this scallop recipe with orange and lemon juice is ideal and refreshing. Prep Time: 15 minutes Serving Size: 4 Ingredients: 1 lb. sea scallops 4 peeled and sectioned medium navel oranges 2 tbsp lime juice ½ tsp grated lime zest 1 julienned medium green or sweet red pepper 1 minced garlic clove 2 tbsp olive oil 2 tsp minced fresh cilantro 4 chopped green onions ¼ tsp crushed red pepper flakes

Hot cooked pasta or rice ½ tsp salt Procedure: 1. Sauté the onions, pepper, and garlic with oil in a large pan for a minute. 2. Put the salt, pepper flakes, and scallops and cook them for 4 minutes. 3. Add the lime zest and juice and cook for another minute. Then, lower the heat. 4. Put the cilantro and orange sections and cook for 2 minutes more or until the scallops become opaque. 5. Serve with hot pasta or rice.

Walleye with Honey

Does your family enjoy fish? This dish is great because it is a simple and fast way to prepare and cook fresh walleye. Prep Time: 20 minutes Serving Size: 6 Ingredients: 1 to ½ lb. walleye fillets 2 tsp honey 1 large egg 2 cups of crushed Ritz crackers ½ tsp salt A ⅓-½ cup of canola oil Lemon wedges, minced fresh parsley (optional)

Procedure: 1. Beat the egg and add the honey in a shallow bowl. 2. Mix salt and crackers in a shallow dish. 3. Coat the fillets in the egg mixture and the cracker mixture well. 4. Using a heavy skillet or cast-iron, cook the coated fillets on medium heat for 3 to 5 minutes on every side or until the fish becomes golden and can be easily flaked using a fork. 5. Put some parsley on the top. You can also add lemon wedges if you want.

Crab Boats

You can have this dish with rice, tortilla chips, or beans. Crab boats are great if you plan to go to a picnic or party. You can serve them deliciously hot or cold. Prep Time: 20 minutes Serving Size: 8 Ingredients: 2 cans of drained lump crabmeat 5 peeled and halved medium ripe avocados 2 tbsp lemon juice 1/2 cup of mayonnaise ¼ tsp pepper 1 tbsp drained capers 2 tbsp minced chives 1 seeded and minced Serrano pepper 4 tbsp chopped fresh cilantro

1 cup of shredded jack cheese ½ tsp paprika Lemon wedges Procedure: 1. Preheat the broiler. 2. Using a fork, lightly mash 2 avocado halves in a large bowl. Add the lemon juice and mayonnaise and mix well. 3. Add the crab, chives, capers, pepper, and 3 tbsp of cilantro. Place the mixture in the extra avocado halves. 4. Place the avocado halves in a 15x10x1-inch baking pan. Put some paprika and cheese on top. 5. Broil 4 to 5 inches from heat for 3 to 5 minutes or until the cheese melts. 6. Spread the excess cilantro and serve with the lemon wedges.

Vegetable and Sausage Griddle

Your family will enjoy this hearty meal because of the different vegetables it has. The sausage and vegetable skillet has been a family favorite for years. It contains a variety of vegetables and cooking time is minimal. Prep Time: 20 minutes Serving Size: 4 Ingredients: 1 lb. fresh Italian sausage links 2 cups of cubed yellow summer squash 3 cups of chopped tomatoes ⅛ tsp cayenne pepper 2 tbsp canola oil 1 cup of chopped green onions 3 to 4 minced garlic cloves 4 tsp Worcestershire sauce

Procedure: 1. Cook sausage in a large skillet with oil on medium heat until your thermometer reads 160 degrees and drain. 2. Once cool enough, cut the sausage into half-inch pieces. 3. Put the sausage pieces in the skillet again. 4. Add the onions and tomatoes and cook them for 3 minutes. 5. Put the garlic and cook for a minute longer. 6. Mix the Worcestershire sauce, cayenne pepper, and tomatoes until heated well.

Spinach and Apple Salad

You do not need to worry about the spinach and apples losing their texture because this salad recipe has a light, tangy, and sweet dressing. It is best served with bread. Prep Time: 20 minutes Serving Size: 10 Ingredients: 6 diced bacon strips 9 cups of fresh baby spinach 2 thinly sliced unpeeled large red apples 3 tbsp brown sugar 1 chopped medium red onion ¼ cup of cider vinegar Procedure: 1. Cook the bacon strips in a large pan until they become crispy. Remove and

drain them on paper towels. Set aside 2 tbsp of the drippings. 2. Add the brown sugar, drippings, and vinegar to the same pan. Wait for it to boil and stir the sugar until it dissolves. Let it cool a bit. 3. Add the bacon, apples, spinach, and onion to a serving bowl and coat them with the dressing. Serve immediately.

Beef Taco Pan

If you have a busy day, you can save effort and money with this quick taco dish. The ingredients are convenient, so your family will not wait for a long time to enjoy this. Prep Time: 20 minutes Serving Size: 6 Ingredients: 1 lb. ground beef 1 bottle taco sauce 1 can of drained whole kernel corn

10 corn tortillas (cut into 1-inch bites) 1 ¼ cups of shredded cheddar cheese Hot pepper sauce (optional) Procedure: 1. Cook the onion and beef on medium heat in a large pan until the pink color in the meat disappears. Once done, drain the meat. 2. Put the tortillas, corn, a cup of cheese, and taco sauce until well-heated. 3. Put the excess cheese on top and serve with pepper sauce if you want.

Fresh Tomato Linguine

This garlic and basil pasta dish is ideal in late summer when tomatoes are the freshest. You can have it with a salad or add some diced chicken. Prep Time: 20 minutes Serving Size: 6 Ingredients: 3 chopped medium tomatoes 8 oz uncooked linguine

6 sliced green onions 3 tbsp butter ¼ cup of minced fresh basil or 4 tsp dried basil 1 tsp salt ½ tsp pepper ½ cup of grated Parmesan cheese 2 minced garlic cloves Procedure: 1. Prepare the linguine following the package instructions. 2. Put all the ingredients in a large bowl except the butter. Let them cook for 4 to 5 minutes. 3. Drain the linguine and put the butter. 4. After draining, transfer the paste into a bowl and mix well in the tomato mixture. Garnish if desired.

Smoked Chicken and Gouda Sandwiches

The rich smoky and garlic flavor of these sandwiches makes them very delicious. What makes them even better is the combination of cheese, garlic, and herbs. Prep Time: 20 minutes Serving Size: 4 Ingredients: 2 cups of shredded rotisserie chicken 8 slices of toasted country white bread ¼ cup of garlic-herb mayonnaise 4 slices of smoked Gouda cheese ¼ tsp salt ⅛ tsp pepper 2 thinly sliced small peaches or medium plums Procedure:

1. Preheat the broiler. 2. Put 2 tbsp of mayonnaise on 4 slices of toasted bread and put them on a baking sheet with foil. 3. Place the chicken on the bread and put salt and pepper. Then, put the peaches and cheese on top. 4. Broil 3 to 4 inches on the heat for 2 to 3 minutes or until the cheese melts. 5. Put the excess mayonnaise on the other 4 toasted bread slices and place them over the broiled toasted bread slices.

Salad with Grilled Chicken and Blueberry Vinaigrette

Adding chicken to a salad makes a refreshing meal. The blueberry vinaigrette levels up this quick salad dish. It is great when served with a fresh baguette and a cold minty glass of lemonade. Coat the chicken with salt, pepper, oil, and garlic. Cover it and chill it for 30 minutes. 2. Add all the ingredients for the vinaigrette and mix them in a small bowl. Cover and put it in the refrigerator. 3. Grill the chicken with a cover on medium heat for 5 to 7 minutes on each side or until your thermometer reads 165 degrees. 4. After grilling, set the chicken aside for 5 minutes before you slice. 5. Put the greens, chicken, blueberries, and oranges on a plate. 6. Stir the vinaigrette again and pour on the salad. Put some cheese on top.

Meaty Tostadas

If you are craving something a little spicy, you can serve this beefy tostadas dish in your next dinner. Prep Time: 15 minutes Serving Size: 6 Ingredients: 1 lb. 90% lean ground beef

6 tortilla shells 3 tsp chipotle sauce ½ cup of chili sauce 1 cup of chopped sweet red pepper ¼ tsp salt ½ cup of sour cream 1 tsp taco seasoning ¼ tsp pepper 1 ½ cups of guacamole 3 cups of shredded lettuce 1 ½ cups of shredded Mexican cheese blend Procedure: 1. Cook the beef and red pepper in a large pan on medium heat until the meat is not pink; drain. 2. Add the taco seasoning, salt, pepper, and chili sauce until well-heated. 3. Mix the chipotle sauce and sour cream in a small bowl. 4. Put lettuce, beef mixture, guacamole, cheese, and chipotle cream on each tortilla.

Grilled Eggplant with Lime and Sesame Seeds

This recipe is a perfect blend of Greek and Asian cuisine. The eggplants make it Greek and the seasonings make it Asian. Brush the mixture on each side of the eggplant slices. 3. Grill with a cover on medium heat for 4 to 6 minutes or until the eggplant slices become tender. 4. Place the eggplant slices on a plate. 5. Add honey and pepper flakes in the excess mixture and pour over the eggplant. 6. Top off with green onions and sesame seeds.

Curried Chicken Salad with Peaches

This dish is a good way to surprise your family during the busy weeknights. Simple and healthy, you can easily make this dish even if you do not cook often. Your family and friends will surely ask for more when you serve it over salad greens or lettuce. Alternatively, you can fill a roti or tortilla wrap to make a sandwich. Prep Time: 15 minutes Serving Size: 4 Ingredients: 4 tilapia fillets ½ cup of grated Parmesan cheese ¼ tsp dried basil 2 tbsp mayonnaise 3 tbsp softened butter ¼ tsp pepper ⅛ tsp onion powder ⅛ tsp celery salt 4 lemon wedges

Procedure: 1. Mix the parmesan cheese, butter, mayonnaise, dried basil, pepper, onion powder, and celery salt in a small bowl, 2. Place the fillets in a 15x10x1-inch baking pan coated with oil. Put the cheese mixture on the fillets. 3. Broil 4 inches from heat for 4 to 5 minutes or until the toppings become slightly brown and the fish can be easily flaked with a fork. If you want the fillet to be browner, you can rotate the pan halfway. 4. Serve with lemon wedges.

2. Place one bread slice in the sandwich iron with the buttered side facing down. 3. Spread the pizza sauce and put 2 tbsp of cheese, pepperoni, and green pepper if you want. 4. Put the excess cheese and the other bread slice with the buttered side facing up. 5. Close the iron and cook on a hot campfire for 3 to 6 minutes or until the bread becomes golden brown and the cheese melts. Turn the iron from time to time.

Put the slaw mix, ramen pieces, green onions, and almonds in a large bowl. 5. Add the dressing and coat everything.

Black Bean Quinoa Bowl

If you do not like the greasiness of taco salad, you should try making this quinoa bowl recipe. You can fill it up with fresh cilantro, avocado, and pico de gallo. Then, top it off with hummus dressing. Prep Time: 10 minutes Serving Size: 1 Ingredients: ¾ cup of rinsed canned black beans ⅔ cup of cooked quinoa 3 tbsp pico de gallo ¼ cup of hummus ¼ diced medium avocado 2 tbsp chopped fresh cilantro 1 tbsp lime juice Procedure:

1. Mix the quinoa and beans in a bowl. 2. Combine the lime juice and hummus in a small bowl. You can adjust the consistency of the mixture by adding water. 3. Add the hummus mixture to the bean mixture. 4. Put avocado, cilantro, and pico de gallo on top.

This garlic hummus is very easy since you just need to add the ingredients to a processor. You can serve this creamy dip with pita chips, crudités, or veggie chips. Prep Time: 10 minutes Serving Size: 8 Ingredients: 1 can of no-salt chickpeas 1 garlic clove ¼ cup of lemon juice ¼ cup of extra-virgin olive oil ¼ cup of tahini ½ tsp salt

½ tsp chili powder 1 tsp ground cumin Procedure: 1. Drain the chickpeas and set aside ¼ cup of the liquid. 2. Put the chickpeas and the liquid that was set aside in the food processor. 3. Add the oil, garlic, cumin, salt, lemon juice, tahini, and chili powder. 4. Mush everything in the processor for 2 to 3 minutes or until the consistency becomes very creamy.

English Muffins with Peanut Butter and Chia Berry Jam
