While the negatives in crepes may not make a long list, they are still worth noting.

Sugar count can sometimes be high in crepes depending on the recipe. For some sensitive to sugar, such as people with diabetes or people trying to lose weight, you may need to watch what you put in your crepe. You'll also generally want to keep as much processed sugar out of your crepe and replace it with sweet fruits instead. Some versions of crepes can be fried, which is also harmful to your health in large consumptions. Fried foods have large amounts of fat in them and can lead to health problems such as obesity, heart problems, and more. These types of crepes may taste great, but always be sure to eat fried crepes as a cheat day kind of treat and not as your regular after-lunch snack. Crepes can fit just about any lifestyle and diet with its interchangeable recipes. Now grab your ingredients and get creping and remember to monitor your health requirements.

Pumpkin Crepes

Pumpkin crepes are a healthy and perfect crepe option for you and your family during the fall when pumpkins become available. Add cinnamon, nutmeg, and ginger to get an excellent flavor blend. For an excellent breakfast, serve these pumpkin crepes with a bit of syrup or butter and ensure you serve warm. Serving Size: 8 Cooking Time: 20 minutes Ingredients: 2 eggs 1/2 cup pumpkin puree 2 teaspoons of vanilla 1¾ cups milk 3 tablespoons of butter 1¼ cups all-purpose flour 1½ tablespoons sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 1½ teaspoons cinnamon 1/2 teaspoon nutmeg

1/4 teaspoon ginger Instructions: Heat the milk and butter in a small saucepan until the milk is just warm and the butter has melted. In a separate small bowl, whisk together the pumpkin puree, vanilla, and eggs. Add this mix to the warm milk, whisking constantly. Add the flour, sugar, ginger, nutmeg, cinnamon, salt, and baking powder to the pumpkin mix and whisk all together until a smooth batter forms. Heat a small skillet or crepe pan over medium heat with about a teaspoon of butter. Scoop about a fourth of a cup of crepes batter into the hot pan and tilt the pan so that the crepe batter covers the entire bottom of the pan- the crepe should be the size of the whole frying pan. After about two minutes, the crepe should be lightly browned and ready to flip. Flip the crepe using a spatula (or try your hand at flipping it using just the pan and a flick of the wrist!). Cooking Time: 20 minutes Serving Size: 6 Ingredients: Crepe Batter 1 cup regular flour or whole wheat flour 1 tablespoon Apple Juice Concentrate 1/4 teaspoon ground cinnamon (optional) 1½ cups water 1/4 teaspoon salt 1 egg vegetable oil or cooking spray Filling 3 teaspoons of water for cooking apples Apples (1 apple for every two crepes)

Honey Optional Items for Filling: Raisins, Pecans or walnuts, Powdered Sugar, Cinnamon Instructions: In a small pot, cook the peel and sliced apple with a small amount of water or apple juice for about 3 minutes or until tender. In a medium-sized mixing bowl, combine all the crepe batter ingredients (except the oil). The batter should be much thinner than pancakes. Pour additional water or frozen apple juice concentrate, a teaspoon or so at a time, until the batter is thin. Preheat a pan on medium heat with a very small amount of vegetable oil. When warm, pour the batter and tilt to spread the batter to a thin layer into the pan. Gently loosen the crepe with a spatula and flip the crepe over in the pan when the edges start peeling away from the pan or when the edges become lightly golden (whichever comes first). The second side should cook much more quickly. Transfer crepe to a plate and put several slices of cooked apples in a line across the center of the crepe. Sprinkle with honey with the following options: cinnamon, nuts, or raisins. Roll the crepe up and top with additional filling items, dash in powdered sugar on the top. Serve and enjoy!
